Here is a quick and easy Breakfast Banana Bread by Diane Justusson
- 1/3 cup Waianae Gold Flour in a bowl. Mash down lumps with a dry fork (makes it easier to mix.
- Add 2 beaten eggs + 1 ripe mashed banana
- Mix until mostly smooth
- Pour into small baking dish (I use Pyrex 7 in X 5 in X 1.5 inch) — and use that spatula to get every delicious drop!
- Microwave until completely set (no liquid) (about 3-6 minutes)
I have a small microwave. It takes about 5 minutes. More powerful microwave may take less time. I also put the plastic lid loosely over pyrex baking dish to help it cook. Experiment with your microwave so that you know how long you need.
The bread should be slightly moist from banana but no liquid. It will come out of the dish easily. No need for greasing dish.
This makes a Perfect breakfast bread. High in protein and fiber. No added sugar. Gluten free. Super fast and easy.
